OK, In theory, my previous post sounded great, but in reality FAT32 must REALLY suck. Now all this could just be some kind of coincidence, freak phenomena that caused my iPod to not work well.
So I plugged my iPod into my room mates windows machine and used the iPod updater to restore the iPod. This formats the iPod for windows use, in FAT32,and updates (if needed) the iPod to the newest firmware revision.
